How does Apple explain here:

  1. Go to the Fitness app With your iPhone.
  2. Tap activity rings and tap Change of goal Next to activity rings.
  3. Tap one of the following:
    • Adjust today’s goals: Set a temporary goal for today’s activity ring.
    • Adjust the target schedule: Customize your activity goal by the day of the week. To customize your goals, tap the schedule in the upper right corner.
  4. Tap Deletion button or Addition button Adjust your goals.
  5. When it is finished, change the tap (Activity) Today’s goal, or set (Activity) Goal schedule.
